What’s good and what’s even better?
Basically, there are two categories of cocoa: bulk and fine flavoured cocoa. Most chocolate bars are made from bulk cocoa. fine flavoured cocoa is rare and expensive.
Only 5 per cent of the world's production is fine flavoured cocoa made from the Criollo and Trinitario varieties of the cacao plant which thrive best in Central and South America, in the Caribbean, on Madagascar and some islands in Asia.

Depending on its taste and aroma the cocoa is specifically selected for one particular recipe; cocoa for this recipe will always come from one selected plantation. The chocolate bears the name of the plantation.
